AQUA Forte is located in the heart of the oldest living fort. The Galle Fort is a timeless relic built more than 400 years ago and preserving its heritage and history as new residents within the ancient ramparts is of utmost priority. With this in mind, we work hard to align ourselves with global best practices that have a positive impact on the environment and community of our locality. We ensure these are implemented right from the design of our restaurants to our daily operations.

Our commitment to a sustainable future is reflected in our practices. From daily operations to the kitchen, we have implemented simple practices that make a significant difference to the local community that we live and operate in.
Our authentic Italian dishes are made with the best and freshest ingredients. We procure these fresh ingredients, such as eggs, vegetables, herbs, fish and meat from local farmers and vendors, who are registered fair trade and organic suppliers. We do, however, import the more Italian ingredients for our dishes like our special pastas and regional cheeses that are not available in Sri Lanka. This is done to be able to provide the authentic Italian flavours for our valued clientele.
As a practise, we avoid the use of non-reusable products like plastic bottles and straws, paper napkins and hand towels. By eliminating single-use plastics and paper products and by replacing them with reusable glass and fabric products, our efforts to be a sustainable business in Sri Lanka are well underway! All our utensils and glassware are cleaned with special brushes and tools that are specially designed to ensure hygiene and quality are maintained.
